Happy Fourth of July Friday to one and all! The Fourth may be tomorrow, but pretty much everyone has the day off today I think, so it’s time to celebrate America, land of the free, home of the brave, and occasional provider of three-day weekends. I’ll even be going easy on the bar studying – this is one of my favorite holidays, after all.
Really, any holiday with fireworks is a win in my book. Fireworks in general are just sparkly and fun. The photo below is the view during the fireworks after a NY Philharmonic Concert in the Park, and that’s not even a holiday. I loved them set off during the Guy Fawkes bonfires in Oxford too. And of course, the Disney fireworks shows are pretty spectacular.
I like to take some time on the Fourth of July to reflect on how lucky I am to have been born in this country, and to thank all the men and women who defend it every day. One of my close friends’ husbands graduated from West Point two years ago and is now serving overseas, and I’m just counting the days until he comes home safely so that they can have a big wedding celebration! My friend and I both love this song, so thought I’d share it here although I’m sure everyone has heard it.
In the meantime, I’ll be munching away outdoors as our family barbecues for dinner, and maybe hitting the beach.
Speaking of holiday meals, I have a new recipe to share! I’ve always loved corn muffins and cornbread, but most bakery and homemade versions call for gluten-y ingredients, and aren’t all that healthy. So after a lot of trial and error, I’m pleased to share a delicious recipe of my own making. I served these gluten free Golden Corn Muffins alongside the salad at my first dinner party a few months ago for the bread course, and they were a big hit. They’re tasty toasted with a smear of butter, or enjoyed plain alongside some summer barbecue. With the warmer weather comes the season for BBQs and picnics – especially the ones right before settling in with family and friends to watch the Fourth of July fireworks. The perfect chance to try whipping up a batch.

Oh amazing! I really want to go to that area, I visited SF for the first time last January but it was brief and I want to do the coast!
