Hello and happy Friday! Today I’m dropping in before I head off for a whirlwind weekend in Florida to share the “recipe” for a breakfast I posted on Instagram on Monday morning. I say that in quotation marks because I don’t really think of it as a recipe, just a bunch of ingredients I mix together to have myself a little dessert for breakfast. But a friend and follower put in a request, so those who want to enjoy a blend of bananas, peanut butter, chocolate chips, and sweet creamy goodness at the start of the day, you’re in luck with this Banana Peanut Butter Chip Breakfast Sundae.

WIAW #43

This WIAW showcases a transition during the second week of my elimination. I decided to stick it out for three weeks of no grains, dairy, or soy, to see if any of these might be the culprit of some health issues I’d been experiencing on and off. Like last week, it didn’t mean I wasn’t able to enjoy lots of delicious food, with a little creativity and planning ahead. I’m used to being extra careful, after all! However, one thing changed toward the middle of the second week. I started to be ravenous all the time. For no particular reason. In fact, last week I only ran three days, with lower mileage than the rest of the month. I’m not sure if the elimination did something to my metabolism, but this usually filling breakfast of a microwave pumpkin scone and a huge dollop (maybe 5-6 spoonfuls) of sunflower seed butter only stayed me for an hour on Friday!

WIAW #30

When I went to type in the title of this post, I was taken aback. The fact that I’ve been doing What I Ate Wednesday, or WIAW, for 30 weeks is just crazy – not to mention the fact that my one year blogiversary is fast approaching! More on that when the time comes, but for now, for everyone who’s enjoyed following the eats of a gluten free, tree nut free, orange and pineapple and avocado free, and still discovering the best way to eat for herself runner – on to a day of eats! Like my first week at work, I started with breakfast when I arrived at my office around 8:30am, a bowl of berries and a slice of smoked salmon quiche that I packed myself.

Weekly Updates 7/13-7/20 and a Monkey Wrench

Hello and happy Monday, everyone! This heat makes me crave ALL THE FRUIT but sometimes you need a little substance to start your morning and week off right, so I tossed some blueberries and bananas into my Peanut Butter Puff-in-a-Mug this morning and paired it with fresh strawberries and iced coffee for a filling pre-workout breakfast. Five Things Friday: Frozen Treats

And we’re back with Five Things Friday! I haven’t done one of these in awhile, mostly because there’s been so much else to talk about here with you. But now that I’m in the thick of bar studying, it’s about time to share some of the the frozen treats that sweeten up my daily eats.You had to know this one was coming. Now that June is in full swing, it’s high season for ice cream and other such sweets. Whether it’s a few scoops of my favorite flavors at the local ice cream shop, making my own sundae at home, or trying out new frozen treats, I am taking full advantage.

 

1. Ice Cream Cones:

One of my favorite activities on a summer evening is taking a trip to the local ice cream shop for a scoop of one of my favorite flavors. At Ferris Acres I can even nab a gluten free cone! Wherever I go, I always top my treat with rainbow sprinkles for some extra pizzazz. I tend to choose my favorite flavors consistently – these include Moose Tracks and Strawberry at Emack & Bolio’s, Raspberry Fudge Swirl with a sweet cream base at Ferris Acres, Cherry Vanilla at Deborah Ann’s, and pretty much any berry-and-dark-chocolate-chunk combo you can think of anywhere.

WIAW #15

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

 

Well, here we go again – a WIAW featuring a day of bar study eats! My meals are pretty monotonous lately, since I’m basically in run-eat-study-repeat mode, but I continue to find ways to mix it up a bit. For example, my pre-run snack yesterday morning. I had a couple of rice cakes smeared with peanut butter and apple butter. I love PB&J, but this is definitely a new favorite combination. And when I pair it with some crisp apple slices? Pre-run snack perfection. I’ll have to add it to the roundup!

Cookie Dough Oatmeal Cake

As promised when I shared my Double Chocolate Chip Oatmeal Cake recipe with all of you, next up is the gluten free Cookie Dough Oatmeal Cake! I couldn’t believe I hadn’t already shared this one. It was one of my first oatmeal cake creations back in the day, when I was newly gluten free and searching for ways to curb my cookie dough cravings. Even just a few years ago, there were not many gluten free cookie dough options other than the kind you get when you’re making a batch of cookies from scratch, which I enjoy doing but wasn’t a quick fix solution. Fortunately, I came up with the perfect mix of oats, chocolate chips, and other yummy ingredients to make this little dish.
