WIAW #34: Thanksgiving Leftovers

I’ve been looking forward to this WIAW for several days, because it’s a chance to show some creativity with Thanksgiving leftovers. On Friday, also known as “the morning after” the big feast, I kicked things off with a double dose of leftover dessert. A slice each of grain free Pumpkin Pouffle and Pumpkin Apple Spice Loaf. One topped with peanut butter, both dotted with chocolate chips. I figured the time to start my lower sugar attempt was not the same time I cut out most grains. One step at a time! WIAW #16: Introducing My Gluten Free Waffle-wich

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

 

 

Welcome to another WIAW! Let’s dive right into my day of eats. Yesterday ended up being a rest day, so I took a short stroll over to Oren’s Coffee Roasters around 7:30am to grab an iced coffee before making breakfast. I had a Cookie Dough Oatmeal Cake and some fresh strawberries to tide me over before heading to an 8am doctor’s appointment near my apartment in NYC, and then hopping on a 10am train home to Connecticut. I squeezed in some studying by flipping through flashcards on the train…all it did was make me realize how hungry I was getting! Even though I didn’t run yesterday, I’ve realized I do need to eat just as frequently on rest days because I am so active overall. I didn’t pack a train snack though, so I had to wait until I got home.

Weekly Workouts + Updates 6/15-6/21

Happy Monday, everyone! It’s time to send some weekly workouts + updates your way. As of yesterday, it is officially summer. For me that means studying for the bar, yes, but also means that in just over a month, the bar exam will be over and I’ll have some late summer travel time that I’m really looking forward to. What makes it feel the most like summer though, is the knowledge that this is my last June when “school’s out” – at least when it’s me that is the one in school! My diploma arrived last week, making it all feel very official. Even though my high school Latin hasn’t stuck with me long enough, they even sent along a translation 🙂

WIAW #13

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

 

Welcome to the first WIAW of June, featuring the Monday kickoff of my second week of studying for the bar. I’ve got a bit less time to be creative in the kitchen around here, but while that means many repeat eats, they’re still delicious and (mostly) healthy, and I have managed to sneak in some seasonal specials, despite the very unseasonable weather that ushered in the week.

 

Pre-run breakfast: A Peanut Butter Puff-in-a-Mug with some strawberries and iced coffee, eaten at 8am while reading the paper and reading a few blogs. Like I said last Thursday, I’ve been eating this dessert-for-breakfast a LOT lately because it’s quick and easy. And my muffin-making has been lower than usual because I don’t want to heat my apartment or house by using the stove!

WIAW #6: Yogurt and Peanut Butter and Ice Cream, Oh My!

Welcome to another round of WIAW! I’m really getting into this habit and look forward to seeing what everyone over at Peas and Crayons is featuring for their eats. This morning’s November Project workout temporarily distracted me. I was loving the shout-out from Christopher MacDougall in the NY Times today…and then he showed up at our workout! Now that I’m home and showered and cozying up to a plate of pancakes, I have some major food photo drooling to do before I head to school. Without further ado, here’s a snapshot of my yesterday’s eats…

Breakfast: Coffee, yogurt, a Braeburn apple, and an egg and goat cheese wrap inside a Food for Life brown rice tortilla. I received a package courtesy of Food for Life, and I’m happy to report that they’re a great new discovery. I love the Trader Joe’s kind, but the nearest TJ’s is one block south of my apartment – and about 1.5 miles to the west! Sometimes I buy groceries there and walk across Central Park, but in future I can find these at the natural foods store around the corner. The trick is to warm one for a minute in a pan before wrapping around your favorite filling. Then they’re nice and chewy and don’t break like a lot of gluten-free wraps!
