WIAW #41

Back to normal after Florida, and that means a fresh focus on cooking after the holidays and hustle and bustle that marked the start of 2016 for me. This WIAW is all about what I’ve been doing in the kitchen. Starting with breakfast, which included some homemade Grain Free Banana Bread Blondies, stuffed into the remainder of a jar of crunchy peanut butter and taken to work as a sweet treat to start the day. I ate an apple to follow all that peanut buttery banana goodness, and had some decaf coffee alongside.

WIAW #38

This WIAW is all about my eats on the (third) to last day of 2015, one I spent in Connecticut relaxing with some old friends from growing up and preparing to greet the arrival of the new year. The day kicked off with a big slice of my Pumpkin Apple Spice Loaf, made with a little less flour and a little extra coconut oil for an especially moist and doughy treat. I had it with a yogurt with peanut butter and blueberries and a mug of decaf coffee, as well as half an apple.

Thanksgiving Thoughts

I’ve been thinking a lot lately about what Thanksgiving means to me. We still have a week to go, but as I mentioned on Monday, Thanksgiving is one of my favorite holidays – honestly, I’d usually say it’s my absolute number one – and I don’t like the way that the Chrismukkah bonanza begins the day after Halloween and Thanksgiving gets glossed over so quickly. It’s a day to savor food and family, even if we all end up having a little too much of both, and to consider all the good things we have in our lives, a particularly potent act after events like those in Paris last week.

WIAW #32

For those of you who follow me on Instagram, you saw my little dessert for breakfast morning on Friday. Well, that actually happened the day before, too…and the day after. My Grain Free Pumpkin Poufflé is just so tasty and easy to slice up for a short and sweet meal if I want to have the luxury of eating at home before I head to work. Of course, as I mentioned, that little luxury was sort of accidental on Friday, but I’ll take what I can get. Now, on to the rest of this WIAW!

Weekly Workouts and Weekend Updates 11/9-11/15

And here we are again, back with my weekly workouts and weekend updates as I settle into my new routine. But first off, I want to ask everyone reading this to take a moment today to think about what happened in Paris on Friday night and to pray for peace. The first time I saw Paris, I was in awe of the magic of the City of Light, and to have that magic marred by such horror is unfathomable. Because I went to college in England, and because I suppose I have a lot of well traveled acquaintances, I found out about what happened first when I got more than a dozen Facebook notifications from Facebook friends who checked themselves in as safe. Say what you will about social media, but its power can be used for good.

I’m off to run the Poland Springs 5M Marathon Kickoff in Central Park this morning on my way to crossing off #7 of the 9 races I need to qualify for the New York City Marathon next year. WIAW #28: Sweet Potatoes to Spaghetti Squash

Happy Wednesday! As usual, I’m sharing a day of eats with you all, although this is a snapshot of last Friday rather than the usual Tuesday, since my first week of work has been all about orientation with no time for food photography – yet! I’m still eating a bit differently to figure out what’s disagreeing with my tummy, as I was last week, mostly free from (cow’s) dairy and grains. Which doesn’t mean I can’t still eat delicious meals, like this simple but tasty breakfast of a turkey and spinach omelet with a baked sweet potato.

Learning As I Blog Along

I’ve been lucky to have some time over the past few weeks to dedicate to blogging as if it were a full time job. While I’d love it if that were a reality, for now blogging is a hobby that I really enjoy and hope to continue with as much as I can. There’s so much to learn, about running a blog and a website, using social media, and developing whatever passion you blog about, which in my case is mostly running and recipes but has also become more about my life in general. And I’ve been thinking a lot lately about how most of the important tools, tips and tricks I’ve picked up are courtesy of other bloggers.

Pumpkin Apple Spice Loaf

Autumn means pumpkin season, and I’ve been all about that lately. Pumpkin muffins, Paleo pumpkin cookies, pumpkins to decorate my front porch, romping in pumpkin patches… Yet it’s also apple season, and apples need some love. After all, apples are my trusty go-to snack, available year round when other fruits go out of season, delicious eaten unadorned or with a few spoonfuls of peanut butter or a sprinkle of cinnamon.
