WIAW # 57: Cook It In A Pan

You may have seen these recent eats on Instagram, but in all the time it took to recap my Maine adventures, I didn’t get around to sharing my eats for the past two weeks. This WIAW for a Wednesday back in NYC is the time to fix that! Breakfast was a one pan scramble with three eggs, Swiss cheese, sautéed spinach, spinach and garlic chicken sausage, and a slice of Udi’s gluten free toast. I don’t eat “gluten free” foods very much but my dad bought a loaf of Udi’s on sale at Costco and gave it to me so I’ve been enjoying a slice with breakfast or brinner for the past week.

WIAW #44

This WIAW showcases one of the last days of my elimination, when I was missing dairy like crazy and still super hungry all the time. I had high hopes last Thursday that a baked quinoa cake, a few dollops of peanut butter, and a giant apple might hold me over from breakfast for an entire two hours until an early lunch. No such luck, though it was delicious.

WIAW #39: Ringing in 2016

It’s the first Wednesday of 2016, and that means it’s time for the first WIAW of the new year! It’s been a hectic week for me, since I came back to work after taking some time off for the holidays on Monday, but have had to head downtown to do interviews for being admitted to the New York State Bar during the workday. I’m also packing for my trip to Florida tomorrow to run the Walt Disney World Half Marathon for the second year in a row. And trying to fuel for the two races I have coming. Starting yesterday with a breakfast of a Baked Quinoa Flax Cake with crunchy peanut butter, and cantaloupe, at home.

WIAW #35: Lunch at The Little Beet

This WIAW will be a little out of the ordinary, showcasing last Friday’s lunch at The Little Beet. Lunch is often my least interesting meal, and I often forgo it in favor of lots of snacks between breakfast/brunch and dinner. This time, it was anything but boring. (Also, I was caught in the blogger act by my dining companion…)
