WIAW #48: Behind the Instagram

This WIAW is all about the eats I’ve been showcasing on Instagram lately, and telling you the stories behind the Instagram of mouthwatering photos. Like this one of a typical at-the-office breakfast for me, a Baked Quinoa Flax Cake with chocolate chips and peanut butter. I tend to enjoy this alongside a cup or three of decaf coffee, with some fruit to follow. I’ve always enjoyed dessert for breakfast, and now that I’m off oats I thought I’d be trying all my oatmeal cake flavors out with quinoa flakes, but I’m still not tired of the PB&C combination.

WIAW #34: Thanksgiving Leftovers

I’ve been looking forward to this WIAW for several days, because it’s a chance to show some creativity with Thanksgiving leftovers. On Friday, also known as “the morning after” the big feast, I kicked things off with a double dose of leftover dessert. A slice each of grain free Pumpkin Pouffle and Pumpkin Apple Spice Loaf. One topped with peanut butter, both dotted with chocolate chips. I figured the time to start my lower sugar attempt was not the same time I cut out most grains. One step at a time! You may have seen photos from this morning on Instagram

Weekly Workouts and Weekend Updates 11/9-11/15

And here we are again, back with my weekly workouts and weekend updates as I settle into my new routine. But first off, I want to ask everyone reading this to take a moment today to think about what happened in Paris on Friday night and to pray for peace. The first time I saw Paris, I was in awe of the magic of the City of Light, and to have that magic marred by such horror is unfathomable. Because I went to college in England, and because I suppose I have a lot of well traveled acquaintances, I found out about what happened first when I got more than a dozen Facebook notifications from Facebook friends who checked themselves in as safe. Say what you will about social media, but its power can be used for good.

WIAW #26 + Tuna Salad Melt Recipe

This Wednesday, my diary of daily eats consists of baked goodies, warming meals, and, well, more baked goodies. The grey, rainy, cool end of last week put me in the mood to do some baking experimentation. Now it’s warmed up again a little, making it a glorious autumn outside that just begs for seasonal sweets. Perfecting my recipe for gluten free pumpkin muffins? Check. Using up the rest of the pumpkin on some awesome pumpkin banana chocolate chip bread? Of course. Making even more muffins because I wanted to test out the batter in a blender? Oh, my goodness, the berryliciousness of it all. And there’s more coming your way on Friday with my pumpkin peanut butter cookies…

Ridgefield Pamby Half Marathon Race Recap

This weekend was a whirlwind of stormy weather and calmer skies, the baking of many autumn pumpkin goodies, and oh yes – my spur of the moment half marathon. Last Tuesday, I decided to sign up for the Ridgefield Pamby Half Marathon, organized by the local Wolfpit Running Club, because my parents were running it and I thought it would be fun to do a hometown race. I knew the course would be hilly, because Ridgefield is basically a bunch of hills grouped around a quaint New England main street area, and I don’t do well with hills, but it was going to be a run for fun. My Ridgefield Pamby Half Marathon race recap is going to feature fun and hills…and some struggling, and some more hills. Don’t say I didn’t warn you!
