WIAW #64: Wedding Eats

This WIAW covers a Saturday that began with post run brunch in New York City and ended at a wedding with perhaps the most food I’ve ever seen in one room. Unfortunately I was too busy to get many photos, but I hope my description does it justice! Anyway, brunch was two gluten free waffles along with a spinach and Cheddar cheese omelet.

Five Summery + Gluten Free Costco Finds

I never expected my spring list of five of my favorite gluten free Costco finds to turn out to be one of the most popular thus far. I guess a lot of other gluten free foodies are eager to find fun new foods or stand-by staples! I’ve found a few more myself since that post was published, so I’m sharing five gluten free Costco finds today that have been especially tasty this summer. (I scheduled this post before my trip, so if you’re following along with that know I will be back recapping tomorrow with tips for running in London!)

Easy Greek-Style Summer Salad

With all the heat and humidity of summer in full swing come August, I’m in the habit of making refreshing yet hearty salads as the base of many meals. I love salads all year round – they’re just especially awesome around this time! Today I’m sharing a recipe for one I enjoy frequently, my Greek-style summer salad that incorporates feta cheese and dolmades (grape leaves filled with rice, vegetables, and olive oil). I tend to use the Frankly Fresh dolmades sold at Costco but they’re sold in most grocery stores! I’ve featured it in many WIAW posts, so regular readers will find it familiar. It’s easy to toss together in five minutes and pleasing to the eye as well as the palate, and contains plenty of fresh veggies, healthy fats, carbs and protein to fuel a summer on the go.

WIAW #18: Sweet Summer Eats

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Welcome to another WIAW. It was muggy and rainy, so I took it as a sign I needed a rest day, and focused on food instead. And Sasha, and studying (*cough* maybe not enough *cough*). I mean, it took Sasha awhile to want to come inside after her morning walk, my only exercise. We barely beat a big storm into the house! Afterwards, there were a lot of sweets to beat the heat, starting with a breakfast treat.

WIAW #16: Introducing My Gluten Free Waffle-wich

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Welcome to another WIAW! Let’s dive right into my day of eats. Yesterday ended up being a rest day, so I took a short stroll over to Oren’s Coffee Roasters around 7:30am to grab an iced coffee before making breakfast. I had a Cookie Dough Oatmeal Cake and some fresh strawberries to tide me over before heading to an 8am doctor’s appointment near my apartment in NYC, and then hopping on a 10am train home to Connecticut. I squeezed in some studying by flipping through flashcards on the train…all it did was make me realize how hungry I was getting! Even though I didn’t run yesterday, I’ve realized I do need to eat just as frequently on rest days because I am so active overall. I didn’t pack a train snack though, so I had to wait until I got home.
