WIAW #36

Another Wednesday, another WIAW. Except that usually I’d expect to be sharing mugs of hot cocoa to stave off the winter chill, when in reality we’ve been having a bit of an Indian Summer spell this December in New York City and what I’d really like most of the time is a bowl of fresh berries! Which luckily I got this week, at breakfast for a work seminar. I had a slice of smoked salmon quiche beforehand since it’s usually just bagels, but the fruit was a nice surprise.

Gluten Free Broccoli Cheddar Quiche

I hosted my first dinner party back in February, and for the main course I served two gluten free quiches. One was a Savory Goat Cheese & Vegetable suitable for vegetarian guests, and the other was a Smoked Salmon & Quinoa Quiche suitable for the dairy free among them. All of my friends loved them, and I whipped up lots of different frittata and quiche recipes as make-ahead meals for the week throughout the spring, but I put all that on hold throughout the summer while studying for the bar five feet away from the kitchen and not cooking so much as constantly snacking 🙂 Now that it’s autumn and I’m getting ready to start my new job, I’m back to experimenting with recipes for meals I can make ahead and eat during the workweek. This gluten free Broccoli Cheddar Quiche definitely fits the bill. It’s perfect to bring to the office for breakfast or lunch, or to re-heat at home for dinner and enjoy along with a side salad.

Happy Wednesday! It’s time to showcase another day of eats, this time a Tuesday when I was happy to be home after my California adventures. Nothing says home to me like a plate of pancakes for breakfast, so some of my favorite gluten free fluffy pancakes were in order, with scrambled eggs and berries and maple syrup.

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

 

Welcome to another WIAW. This round of What I Ate Wednesday is actually of a Wednesday, which I am not sure I’ve ever done before! I snapped photos of my eats from last Wednesday to share with all of you. The bar is getting closer, and my eats are getting pretty samesies, but they’re still delicious, nutritious, and good for body and soul! Breakfast was a gluten free waffle-wich, sweetened up with some honey roasted turkey breast, apple slices, sharp Cheddar, and a touch of maple syrup between two Van’s apple cinnamon waffles. Absolutely delicious with my usual decaf iced coffee.

WIAW #11: Getting Ready to Graduate

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

 

This Tuesday’s eats were all over the map. I was in the midst of preparing for my law school graduation tomorrow (!!!) so that I wouldn’t be rushing around today to get anything ready. I found time for a lovely morning run yesterday though, and managed to whip up a lot of healthy mini-meals to get me through the day. Whenever I’m looking forward to something, or I’m nervous, I feel hungry but not in the mood for anything major, so it ended up working out okay. And here goes my WIAW!

 

Breakfast: I got up early and let this Apple Cinnamon Oatmeal Cake bake, while I finished gathering up my outfit for graduation and laying it out so I’m prepared. I wasn’t sure if I would need to steam it and didn’t want to leave it to the last minute! I had my meal at 8am and then tied up a few other odds and ends before heading out for a run.
