Hello and happy Friday! Today I’m dropping in before I head off for a whirlwind weekend in Florida to share the “recipe” for a breakfast I posted on Instagram on Monday morning. I say that in quotation marks because I don’t really think of it as a recipe, just a bunch of ingredients I mix together to have myself a little dessert for breakfast. Apple Cinnamon Oatmeal Cake

Autumn is in full swing, and the apple and pumpkin recipes are going to keep coming around here! Pumpkin Spice Oatmeal Cake

Few will dare to tread the path of roasting and carving their own pumpkin to reap the delicious rewards when Libby will do it for us. Whoever Libby is, millions of pie-makers around the country must thank her every November. I certainly do every time I whip up a batch of pumpkin muffins or a pumpkin pie. But just opening a whole can of pure pumpkin feels like a commitment. You’re going to have leftovers unless you’re making a pie or a Pumpkin Pouffle.

Gluten Free Broccoli Cheddar Quiche

I hosted my first dinner party back in February, and for the main course I served two gluten free quiches. One was a Savory Goat Cheese & Vegetable suitable for vegetarian guests, and the other was a Smoked Salmon & Quinoa Quiche suitable for the dairy free among them. All of my friends loved them, and I whipped up lots of different frittata and quiche recipes as make-ahead meals for the week throughout the spring, but I put all that on hold throughout the summer while studying for the bar five feet away from the kitchen and not cooking so much as constantly snacking 🙂 Now that it’s autumn and I’m getting ready to start my new job, I’m back to experimenting with recipes for meals I can make ahead and eat during the workweek. This gluten free Broccoli Cheddar Quiche definitely fits the bill. It’s perfect to bring to the office for breakfast or lunch, or to re-heat at home for dinner and enjoy along with a side salad.

A Morning of Food, Flowers and Fun in Nashville

My adventures in Nashville on Saturday were awesome, from sightseeing in Centennial Park, Vanderbilt University, and Music Row to eating a delicious gluten free dinner at AMOT Eatery. But my visit wasn’t over yet. On Sunday, my friend Lauren and I had a morning of food, flowers and fun in Nashville before my flight back. We kicked things off with breakfast around 9am at the Frothy Monkey, a coffee shop/restaurant/bar hybrid that wouldn’t be out of place in Brooklyn or Berkeley (or any other classic hipsterville, take your pick!) There are a few outposts of the Frothy Monkey, one near Music Row on 5th Avenue that we had seen Saturday, one on 12th Avenue, a bit further out from downtown Nashville, and one in the suburb of Franklin. We decided to head to the Frothy Monkey on 12th Avenue, thinking it might be a little less crowded than the one on 5th Avenue. It may have been, but it was plenty full, with a line out the door!

Easy Cheesy Omelet Quesadilla

Hello, friends! As you read this, I am probably on a train en route from the English Lake District back to London to start the second week of my trip across the pond. When I was thinking about recipes to share while I was away, I realized I had never shared one of my most common go-to egg dishes aside from regular omelets and my gluten free waffle sandwich. My easy cheesy Omelet Quesadilla is so easy to make and delicious to eat, I knew it was perfect to pop in.

 

Fun fact – when I was a little kid, I was a voracious reader (I decided to read Ivanhoe at age 8 for some unfathomable reason and was so confused by it). However, I started adopting words in my vocabulary that other kids my age weren’t using, and I didn’t know how they sounded out loud, so I would end up saying them phonetically in front of my parents when I used them in conversation. QUES-A-DILL-A was one of those words. Whenever I make this at home, my dad pointedly asks if that’s what I’m whipping up. But anyway…

WIAW #19: Breakfast, Brunch, and Brinner

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

 

Welcome to another WIAW. I thought to mix it up, I’d showcase a weekend day of eats instead of a weekday – and then I realized, since I’m still studying for the bar, and it’s two weeks away, my weekdays and weekend days are pretty much the same. I run, I eat, I study, I walk Sasha, I eat more, I study more, I procrastinate, I watch Netflix. Super exciting, huh? Anyway, I realized there was one thing that made this Monday, actually, a little snazzier, and that was my unintentional dining on breakfast foods all day long. I’ve done it before, and I’ll do it again, but without further ado – I give you breakfast, brunch, and brinner. A day of eats approved by the one and only Leslie Knope, obvs. 

 

For a pre-run breakfast, I had a Peanut Butter Puff-in-a-Mug with some iced coffee and strawberries. It was actually regular coffee and not decaf, for once. My mom made an early trek to Dunkin’ and brought this back. To beat the heat and get a long-ish run in early, I woke up and ate at 7am so I could digest and be out the door before 8, which meant I could drink caffeine.

This Thursday, I’m thinking out loud about a topic near and dear to many hearts (and tummies). That, my friends, is cereal, the crispy, crunchy snack of kids, adults, runners, couch potatoes, and everyone in between. Including me, as evidenced in my WIAWs of late! Cereal may seem pretty innocuous, but sometimes the most disorienting experiences happen with the most familiar things.

There’s a cereal aisle in every grocery store in America. Whether it’s a generic chain or a small-town market, a Stop n’ Shop or the mom-and-pop shop on the corner, it’s a permanent fixture. You loved it as a kid – the rows of brightly colored boxes, packaging designed to appeal to the children squirming in the basket seats of shopping carts or alternately running ahead of and slowing down their parents, trying Mom or Dad’s patience. You eat the bounty of its boxes in a bowl with milk poured over the particles for breakfast in the morning, or swirled into yogurt. Some people have the same brand every day, others like to mix and match.

Double Chocolate Chip Oatmeal Cake

I’ve mentioned now and again how, although I love dark chocolate, I’m not really a fan of chocolate flavored baked goods. The only way I really like them is if they taste like actual dark chocolate. Which usually means they’re crammed full of dark chocolate chips, which melt gooey and deliciously and would tempt even the most dedicated vanilla aficionado. That’s how I made my Cocoa Chocolate Chip Muffins and Decadent Dark Chocolate Cupcakes, and became the inspiration for this latest rendition of my baked oatmeal cakes. I used unsweetened cocoa powder and real 70% cacao dark chocolate chips to make this delectable dark chocolate treat, and although it tips the the dessert-for-breakfast scales dangerously… I won’t tell if you won’t! This gloriously gluten free double chocolate chip oatmeal cake is bursting with dark chocolate in every bite if you use a liberal tablespoon of dark chocolate chips, and is perfect for any morning you’re craving chocolate for brekkie.
