WIAW #65

More hot days and long runs, more easy summer eats to refuel in this WIAW. Yesterday after my morning 5 miles, I refueled with a cup of coffee and a goat milk yogurt at my apartment before heading to work and digging into my real breakfast.

Once at work, I heated up a chicken sausage and veggie frittata and ate it with some sliced cucumbers on the side. Since I was still hungry after, I had a peach as well.

When lunchtime rolled around, I dug into a salad with sockeye smoked salmon, blueberry goat cheese, pumpkin seeds and honey mustard dressing brought from home.

Afternoon snacks were a mixed berry Siggi’s skyr and a few spoonfuls of the end of a jar of sunflower seed butter, and an apple. I’m actually going to use leftover sunflower seed butter and peanut butter jars as vases for flowers at my wedding next year, so I now have an excuse to go through a jar a week that isn’t just an inability to put the spoon away πŸ™‚

Ice cream for dessert of course. A trip to Emack and Bolio’s to fetch a “free” cup after purchasing 10 over the past several months! It didn’t exactly cost nothing but tasted sweet as always.

  1. You put ketchup on your omelets too? YAY!!! I’m not alone. And all that Siggi’s and goat milk yogurt looks so good. I really love yogurt. I have made french fries before, but I haven’t made them in a while. My favorite is sweet potato fries. Hm… I’ve never worked outside the home, so my favorite bring to work breakfast here in the morning is… a yogurt bowl!

  2. Blueberry Goat Cheese!? Will need to keep my eye out for this – yum!
    I’m loving your” excuse” to use up those nut butter jars – an important task that must be done!!
