WIAW #39: Ringing in 2016

It’s the first Wednesday of 2016, and that means it’s time for the first WIAW of the new year! It’s been a hectic week for me, since I came back to work after taking some time off for the holidays on Monday, but have had to head downtown to do interviews for being admitted to the New York State Bar during the workday. I’m also packing for my trip to Florida tomorrow to run the Walt Disney World Half Marathon for the second year in a row. And trying to fuel for the two races I have coming. Starting yesterday with a breakfast of a Baked Quinoa Flax Cake with crunchy peanut butter, and cantaloupe, at home.

I stopped at the Little Beet before heading back into my office after my interview downtown, since I didn’t have much at home to pack for lunch and would have had to tote it around all day. I went for a plate of grilled chicken, blistered green beans, and charred cauliflower, and it was all kinds of delicious as usual. Oh, and I saw my spirit vegetable on the wall. Is that a thing?

Afternoon snack was a Fage 2% strawberry yogurt and a Pink Lady apple, eaten at my desk while getting through a few assignments.

Dinner at the diner with a friend, because I needed it after a long day and also because of the whole no food in my apartment week I’ve been having. It didn’t make sense to buy groceries on Monday, after being in Connecticut for the holiday week, when I was about to head off to Florida tomorrow. It has been making me feel a little more like a typical Manhattan twenty-something girl whose fridge only holds wine, lemons, and yogurt. But Green Kitchen rescued me with a broccoli, mushroom and Swiss omelet and salad. And I at least walked the four blocks to get my breakfast-for-dinner. No succumbing to Seamless!

For dessert, some dark chocolate, two Grain Free Banana Bread Blondies, and some strawberries. All delicious, all perfect paired with some apple spice tea to warm up on a chilly evening.

 

Deliciously dense, moist banana bread blondies, grain free, dairy free, and a perfect winter treat.

  1. That omelette looks delicious! I love mine with smoked salmon and spinach or plain with tomatoes. And coffee – hands down. I do love green tea, and I have herbal tea every day, but espresso is my one true love. ๐Ÿ˜‰
