WIAW #37

Twas’ the week before Christmas, and all through the house (or apartment)…were wafting scents of delicious treats. Starting on this WIAW, which was actually a Sunday, with a Chocolate Chip Cookie Dough Oatmeal Cake (going back to limited grains in preparation for my little procedure) and a mug of coffee for breakfast before a later morning run.

After my run, I met up with a friend for brunch at Green Kitchen, a diner in Yorkville that’s always been a family favorite. I got one of my usual omelet choices. Grilled chicken, feta, spinach, mushrooms, and tomatoes, with a side of sliced strawberries and blueberries.

For an afternoon snack, I went for a bowl of honeydew and a goat’s milk yogurt. The yogurt was absolutely delicious, and packed with protein and healthy fat (so much tastier than fat free Greek yogurt). It was very expensive so it’ll be a once-in-awhile treat I think, but I’m so glad I tried it.

And then I had a couple of Cinnamon Raisin Quinoa Muffins with a mug of decaf coffee because I was experiencing some serious runger, and the muffins were just begging to be eaten as I photographed them for yesterday’s post!

Dinner was one of my go-to plates of wild sockeye salmon broiled in the oven, a potato baked in the microwave with some Asiago cheese melted on top, and steamed veggies. All whole, healthy foods cooked simply in less than 20 minutes. After a relatively busy day it was just what I needed.

Dessert was some gluten free So Delicious Cookie Dough coconut milk ice cream. That is a mouthful, but it’s worth spelling it out, because if you’re gluten free and missing your cookie dough ice cream, you need to find this stat. It’s awesome.

  1. I love omlet for breakfast…! My favorite meal this week is yet to come: we’ll have salmon tomorrow evening. And my dad will bring his a-ma-zing mousse au chocolat… šŸ™‚

  2. I definitely eat right after I photograph. Photographing is the last step. šŸ™‚ And I think my favorite meal will come on Christmas day. ā¤ šŸ™‚ It's my favorite holiday, because it's such a sweet time of remembrance, joy, and celebration!
