Another Wednesday, another WIAW. Except that usually I’d expect to be sharing mugs of hot cocoa to stave off the winter chill, when in reality we’ve been having a bit of an Indian Summer spell this December in New York City and what I’d really like most of the time is a bowl of fresh berries! Which luckily I got this week, at breakfast for a work seminar. I had a slice of smoked salmon quiche beforehand since it’s usually just bagels, but the fruit was a nice surprise.
For lunch, one of my usual work salads. Every week my department has a lunch, and every week they bring me a salad of mixed greens, grilled chicken, and olive oil and balsamic vinegar on the side. Boring to be sure, but I can’t be too safe with food prepared while I’m at work.
Plus I had quite a decadent mid-afternoon snack to cheer up my palate. A Banana Bread Blondie topped with a Dark Chocolate Fudge Brownie. Everything totally grain free but mouthwateringly delicious, especially since I warmed it a bit and had it with an (iced) decaf coffee!
I had eggs again for dinner. I’ve been eating eggs so much lately because frittatas are so easy to bring to work for breakfast or lunch, and sometimes when I get home I’ve had such a long day I’ve forgotten the earlier meals and want them again! Plus I really wanted something cheesy for dinner. Even though I’m eliminating most grains, I am eating dairy again in moderation, and a bit of Cheddar makes everything better. So I had some of my Veggie Feta Frittata, with the Cheddar melted on top of it and the baby red potatoes I made as a side.
And another brownie for dessert finished off the day, along with an apple (both are old photos since I was too tired to remember to take some). You didn’t think there would be a day without an apple, did you? π

If I bring my lunch to work, I often have soup or curry. Today I have your quiche again – it’s becoming a staple here. π If I don’t bring lunch there is a great Burrito place that my colleagues and I frequent quite often…

Our work cafeterias are actually pretty awesome. Some of my favorite dishes are Minnesota Wild Rice Soup, Channa Masala, and their Kale Caesar Salad (which doesn’t have fish in it! woohoo!) I’m spoiled with our options, haha. Your afternoon snacks looks amazing though! Such a perfect pick me up!

Ah, we don’t have a cafeteria, just the endless number of Manhattan eateries catering to the working crowd at lunchtime with long lines and long-numbered prices. Those sound like great dishes for a cafeteria!

Seriously, respect. I was cleaning out my freezer yesterday and found some (I don’t want to know how old…) banana bread blondies and sweet potato brownies and ate them together. Epic combo π

While that safe salad may be boring, it’s one of my favorites! I’m a bit weird, I suppose. Aaaaand now I’m craving it.

I love that grain free has become SO much easier and yummier over the past few years! π And YEP! I definitely eat the same food for multiple meals some days just because it tastes so good!

A staple lunch for me: egg salad sandwiches. They really pack that protein that makes me feel satisfied and they are delicious!!!

Sometimes I find myself eating chicken multiple times a day (lunch and dinner). But I try to at least change up how its cooked. Those brownies look great!

I always get on random kicks where I eat the same thing multiple times a day every day for weeks. Eggs, avocado, peanutbutter, tuna, salmon, yogurt…REALLY RANDOM stuff.
My go to lunch is always 1 can of tuna, 1/2 an avocado and 1 lemon juiced- mash it together- spread it into a pita. SO EASY!

Brownies topped with other brownies?! I’m so into it.
I could eat eggs multiple times a day as well! There is so much you could do with them. My go to lunch is also a chicken salad, but if it means there is room for brownies in my day, I will gladly eat that (somewhat boring) chicken salad.
