Today’s WIAW is all about peanut butter. Well, mostly. I’m a peanut butter lover and I’m not afraid to shout that from the rooftops. Since I have a tree nut allergy, I miss out on all the other nut butters other bloggers and friends consume by the jarful, so I have to make up for it π In fact, breakfast last Friday began with a surrender to blogger stereotypes. I made my first batch of oats in a jar. Actually, I made one of my apple cinnamon oatmeal cakes, and then I put it into the remains of a jar of peanut butter, and as I ate the gooey, melty peanut butter invaded every crevice of the oatmeal cake and made me feel warm and gooey on the inside.
The thing about starting your morning with peanut butter and warm baked goods is you keep craving them throughout the day. Hence a snack of an Apple Cinnamon Flax Muffin Bite with more peanut butter from a fresh jar.
We had another orientation type lunch at work even though we’re a few weeks in, and they gave me my usual special order grilled chicken salad. I doused it in olive oil and balsamic vinegar. But I’m always still hungry even if I eat the whole thing as I did! Even if chase it with an apple and a Snapple.
So I snagged a peanut butter Snickers again. Except, remember how I mentioned I was having some stomach flare ups (likely from colitis)? It turns out some of them are from accidental trace gluten-ing. I can sort of tell the difference – my stomach tends to swell more with even minor traces of gluten and the pain feels different. Which leads me to believe the biggest issue is hidden cross-contamination. All I know is I won’t be eating these candies or other mass-produced ones for awhile, if ever. Not that I eat many, but in the weeks after Halloween there are bowls around the office and I do love my Reese’s and other peanut butter candies. Anyway, to console myself that afternoon I just spooned peanut butter out of that fresh jar. Multiple times.
For dinner, I was out with a friend at a little Italian restaurant close to my home in Yorkville, where I had a delicious chargrilled calamari salad over mesclun greens, drenched in lemon olive oil. I knew for sure this would be grain and dairy free and it didn’t disappoint.
When I got home, I grabbed some coconut milk chocolate chip ice cream with more peanut butter on top. Sweet, creamy, peanut buttery goodness.
And then a Granny Smith apple with a Peanut Butter Cup Muffin, because I always need some fruit to end the day, and apples with peanut butter are the best.

This sounds like my ideal food day! Peanut butter will always be held dear to my heart haha, I even make sure to take a jar of it with me when I’m on my travels!
My favourite way to eat it has to be spooning it straight out a jar or on freshly baked bread π

Haha peanut butter is so versatile! I’m obsessed with all nut butters (peanut butter is actually the only food that I notice hurts my stomach). Right now I’m on a big sunflower butter kick and I always put a spoonful of that in a baby dish with thin banana slices and enjoy life chocolate chips! I microwave until they melt and make myself believe its healthy!

Oh my, I’m not a peanut butter lover at all and am only a recent and rookie convert to cashew nut butter but even I have to admit that the combination of coconut choc chip ice cream with peanut butter on top sounds utterly irresistible! Some really delicious suggestions in here so thanks for sharing π
