Happy Wednesday! It’s time to showcase another day of eats, this time a Tuesday when I was happy to be home after my California adventures. Nothing says home to me like a plate of pancakes for breakfast, so some of my favorite gluten free fluffy pancakes were in order, with scrambled eggs and berries and maple syrup.
Lunch was one of my go-to Greek-style salads, with grilled chicken, feta, dolmades, and lots of yummy veggies. This was accompanied by two slices of Udi’s whole grain toast, un-pictured because I had put the bread from Costco in the freezer and when I went to take out the slices, they were so stuck together I ended up hacking pieces off bit by bit. It was really more a small pile of un-photogenic toast pieces. Afterwards, a refreshing peach. Also somewhat un-photogenic, but I tried.
An afternoon snack of a yogurt with peanut butter and berries preceded a baking adventure, in which I whipped up a batch of Dark Chocolate Peanut Butter Cake Bars for my dad’s birthday. I had to taste test, of course…look out for this recipe soon π
Dinner began with cucumbers and seaweed salad. Definitely back to the Costco favorites now I’m home! Next up was a round of chicken burgers with melted Cheddar cheese from the grill, accompanied by Portobello mushroom caps, broccoli rabe with olive oil and garlic, and some more grape leaves.
For dessert, a trip to Deborah Ann’s for ice cream. I went for vanilla soft serve with rainbow sprinkles – can’t go wrong with a classic! I had an apple afterwards back at home, I usually end the evening with fruit. And that’s a wrap!

Happy WIAW! I’ve had a lot of good food this week – so hard to pick the best. Steak for dinner? Homemade spaghetti and meatballs? Pizza from our favorite pizza place? It was my husband’s birthday so we had quite a few night’s out.
