WIAW #19: Breakfast, Brunch, and Brinner

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

 

Welcome to another WIAW. I thought to mix it up, I’d showcase a weekend day of eats instead of a weekday – and then I realized, since I’m still studying for the bar, and it’s two weeks away, my weekdays and weekend days are pretty much the same. I run, I eat, I study, I walk Sasha, I eat more, I study more, I procrastinate, I watch Netflix. Super exciting, huh? Anyway, I realized there was one thing that made this Monday, actually, a little snazzier, and that was my unintentional dining on breakfast foods all day long. I’ve done it before, and I’ll do it again, but without further ado – I give you breakfast, brunch, and brinner. A day of eats approved by the one and only Leslie Knope, obvs. 

 

For a pre-run breakfast, I had a Peanut Butter Puff-in-a-Mug with some iced coffee and strawberries. It was actually regular coffee and not decaf, for once. My mom made an early trek to Dunkin’ and brought this back. To beat the heat and get a long-ish run in early, I woke up and ate at 7am so I could digest and be out the door before 8, which meant I could drink caffeine.

After my run, I feasted on a brunch of my favorite pancakes, scrambled eggs, and a Pink Lady apple I sliced up alongside. I also had some turkey bacon but that didn’t fit in the photo. Or I may or may not have eaten each slice straight from the pan and burned my fingers. Anyway, the pancakes were fluffy and delicious, the eggs were scrambled just so, and the whole thing was drenched in some good Maine maple syrup. I even tried pouring some in my now-decaf iced coffee but that actually isn’t very good.

I had returned from my run just before 10, so after showering and standing there flipping the pancakes impatiently and eating the first two before I took these photos and sat down like a civilized person, it was already close to 11. The runger was real, and even a big stack of fluffy goodness and scrambled sides didn’t curb it. I am satisfied that I realized I wasn’t yet satisfied. Hence, a breakfast-dessert of a Yoplait Whips! Vanilla Cupcake Greek yogurt and a handful of those dark chocolate covered Superfruits

I buckled down to studying around noon for a whole 1.5 hours (yes, I know, I’m so disciplined. Or not. But really, it’s less than two weeks away now…I feel like I know enough that as much enters my brain every day, also falls out.) So I took a snack break of a perfectly ripe peach and a peach Greek yogurt. And then Sasha came in asking for a bite, and then I was so ready to get out of the house again, so we took a walk around the block. Neither of us wanted to come inside after, so to reward her for re-entering the house Sasha got a snap. And then, the cabinet where the snaps are is next to the human food cupboards, and I decided I deserved another snack too, so I went for cereal, the most simple of all breakfast foods. A cup of Corn Chex did the trick.

And finally, Breakfast-for-Dinner, or brinner, as I like to call it. I started with a salad (not exactly a typical breakfast dish but actually I start a lot of breakfasts/brunches with salad if it’s after 9am or so, especially when the dish to come is eggs). Romaine, radishes, carrots, and cabbage, with feta cheese and honey mustard dressing, and a few slices of sockeye smoked salmon on top because I couldn’t wait to eat it. I followed up with a breakfast bowl of the rest of the salmon, eggs, and veggies. I wanted to add potatoes, but I was really impatient and didn’t want to slice and cook any, so I ended up toasting a few gluten-free waffles and eating them on the side.

Of course, there was fruit to follow. A nectarine this time. For the rest of dessert, out came a frozen yogurt bar. Yogurt is a breakfast food, so frozen yogurt is okay for breakfast, right?

To finish the day’s eats, a couple of dark chocolate peanut butter cups that my parents brought back from Maine, just because. Chocolate and peanut butter can definitely both be part of a balanced brekkie!

  1. Nothing wrong with eating breakfast all day. In fact, I think people should do it more often :).

    p.s. Have you tried Trader Joe’s peanut butter cups? Their delicious!!

  2. I’m pretty positive I could eat breakfast for every meal of the day. Love love love it. And I really need to get on this pancake bandwagon. I keep seeing them and saying I need to make them, so Saturday after my long run it is on!

  4. I love breakfast for dinner. Since I never have time to cook fun breakfast foods in the morning, I love whipping up some eggs or pancakes for dinner. I eat the bulk of my veggies and meat proteins for lunch, so my evening is left for fun food. Yeah, most people do chicken breasts or salmon filets for dinner. I’d rather eat that for lunch. As a mid-day meal, it’s filling, nutrient dense, and fuels me for my evening workout. Breakfast needs to be redefined! It’s the most important meal of the day…and the most important meal to end the day… 🙂

  5. I didn’t even realise it was strange to have pancakes or eggs etc. for dinner until like last year when one of my friends commented on it, saying I was having breakfast for dinner. I guess I just grew up having these kinds of foods at dinner and not really at breakfast!
